12월 11일 Farmhouse BBQ MuffinsA quick and easy meal. You could change this up and make it a pizza muffin by using pizza sauce instead of BBQ sauce and pizza cheese instead of cheddar. My kids like the BBQ taste better.
Farmhouse Barbecue Muffins 1 tube refrigerated buttermilk biscuits
1 pound ground beef 1/2 cup ketchup 3 tablespoons brown sugar 1 tablespoon cider vinegar 1/2 teaspoon chili powder 1 cup shredded cheddar cheese Separate dough into 10 biscuits; flatten into 5" circles. Press each into the bottom and up the sides of greased muffin cups; set aside. In a skillet, brown ground beef; drain. In a small bowl, mix ketchup, brown sugar, vinegar and chili powder; stir until smooth (Quick and easy option, use your favorite prepared, store-bought BBQ sauce). Add to meat and mix well. Divide the meat mixture among biscuit-lined muffin cups, using about 1/4 cup for each. Sprinkle with cheese. Bake at 375 degrees for 18-20 minutes or until golden brown. Cool for 5 minutes before removing from tin and serving.
9월 17일 Spaghetti PieI first had this dish 17 years ago this week. My dear friend Nancy brought this dish for me days after I'd had my 3rd child (and only son) which was just a few weeks after she had given birth to her second son. Our boys have grown up together, and while their talents and interests have taken them different places, Kurt and Mark still consider each other as closest friends. And, Nancy and I are still close friends!
Spaghetti Pie
Serves: 6
6 ounces spaghetti, uncooked
2 tablespoons butter 2 eggs 1/3 cup parmesan cheese 1 cup cottage cheese 1 pound ground beef OR 1 pound ground pork sausage 1 jar Ragú Pizza Quick Sauce 1 cup mozzarella cheese, shredded Cook spaghetti; drain. Stir in butter, eggs and Parmesan cheese. Press into bottom of a 10 inch pie plate. Spread with cottage cheese.
Brown meat and drain. Add sauce to meat. Spread meat over spaghetti crust. Top with cheese.
Bake in 350 degree oven for 30 minutes
Note: I no longer make this in a pie plate, nor do I make the spaghetti noodles into a "crust". The uncovered spaghetti cooked up too hard and crunchy for our liking. So now I just layer this dish in a 3 quart casserole dish, making sure to cover all of the spaghetti noodles with the sauce. 9월 9일 Li'l Cheddar MeatloavesI think the following recipe has made the rounds of many recipe exchange lists for the past several years. It was originally published in my favorite foodie magazine Taste of Home in 2000. The author of this recipe is Katy Bowron. The only thing I've changed from her origina recipe is to use bread crumbs instead of Katy's suggestion of quick oats as a binder. My kids didn't like to "see" the oats. Teamed with my Parsley Potatoes and a green veggie, this is what I call a "comfort" meal.
Li'l Cheddar Meat Loaves
Recipe By: Katy Bowron of Cocolalla, Idaho
Serves: 8 1 egg
3/4 cup milk 1 cup cheddar cheese, shredded 1/2 cup dry bread crumbs 1/2 cup onion, chopped 1 teaspoon salt 1 pound ground beef 2/3 cup ketchup 1/2 cup packed brown sugar 1 1/2 teaspoons prepared mustard In a bowl, beat the egg and milk. Stir in cheese, bread crumbs, onion and salt. Add beef and mix well. Shape into eight loaves; place in a greased 13 x 9 inch baking dish. Combine ketchup, brown sugar and mustard; spoon over loaves. Bake, uncovered at 350 degrees for 45 minutes or until meat is no longer pink and a meat thermometer reads 160 degrees. These can be made ahead of time and frozen. Prepare the meatloaves as directed, but don't add the ketchup sauce. Place the formed meatloaves on a tray and place in the freezer for a few hours. When the loaves are frozen, place them into a freezer bag or container, label and date and return to the freezer. When you want to prepare them for dinner, take out as many as you want, place on a tray and bake as directed. You can bake from the frozen state, just add about 15-20 minutes to your cooking time and check the internal temperature often to make sure that you have cooked the meat completely. Add the ketchup sauce in the last 30 minutes so it doesn't burn. |
